The 18-hour broth is no joke. Deep, rich, perfectly salted. Chashu pork was tender. Soft-boiled egg was exactly right. This is the ramen Chicago needed.

The consomme dipping broth alone is worth the trip. Crispy cheese-lined tortilla, slow braised beef, fresh cilantro and onion. Messy, glorious, unforgettable.
